Food , Wine and Culture tasting

An excursion that takes you back in time to one of the oldest, unspoilt villages in the Sannio region; a real open-air museum with its paved streets, ancient buildings and picturesque courtyards rich in works of art. The Sannio region is renowed for the quality of its wine and there will be an opportunity to visit a traditional wine cellar, excavated in the rocks forming the foundation of a family home. Lunch will be served in a nearby, old established restaurant where the food is personally expertly prepared and cooked by the owner.

We will travel to Gragnano, a small town famous since roman times for the quality of its “pasta” and wheat.

The prevailing sea breezes, lack of humidity and warm climate all contribute to the quality of the pasta. Using only the natural ingredients of water and wheat and ensuring that the pasta is dried for 52 hours, guarantee its distinctive taste. It will be interesting to visit a traditional factory to learn about the different stage of the pasta production. The term “mozzarella” derives sure from the operation of “stumping by hand” practiced in the final phase of the working of the mozzarella. It will be very nice to see the particular working of its production. Mozzarella is made from fresh pasteurized or unpasteurized cow’s milk. The farmer will show you the working of the paste of the cheese, spinning by hand, till end of maturation in order to obtain the particular consistency of the final product.

Paestum and Buffalo Mozzarella

Paestum is one of Italy’s most important archaeological sites, founded by the Greek colonists around 600 BC. We suggest a varied itinerary as follows:
- a guided visit to the ancient temple to gain an understanding of Greek life as it was at that time
- a guided visit to one of the most famous Buffalo farms. Walking around the farm you will make the opportunity to see the buffaloes, wallowing in their water holes, and then enjoy watching how the mozzarella cheese, ricotta and yogurt are produced
